MAKES 2 MUG CAKES

Food coloring is not always a welcome ingredient, but this cake is a much beloved component of March 17th celebrations—especially if you’re feeding little leprechauns. For the bigger leprechauns, omit the peppermint and add a tablespoon or three of Jameson’s Irish whiskey.

INGREDIENTS

1 large egg

3 tablespoons vegetable oil

¼ cup granulated sugar

½ teaspoon pure vanilla extract

1 teaspoon liquid green food coloring

3 tablespoons buttermilk

1 drop peppermint extract (or 2 to 3 tablespoons Irish whiskey)

1⁄3 cup self-rising flour

Pinch of kosher salt

METHOD

In a large mug, whisk together the egg and oils with a fork. Stir in the sugar, vanilla, food coloring, buttermilk, and peppermint or whiskey. Add the flour and salt. Beat the batter until smooth. Divide the batter between two mugs. Microwave separately for 1½ to 2½ minutes each until risen and firm.

Topping Ideas: Cream cheese frosting (tinted green, perhaps?), green crystal sugar, Irish whiskey glaze, chiffonade of peppermint leaves, or shaved chocolate.
